Wild Rice Pilaf

Servings: approx. 6 servings, ½ cup per serving

 

Ingredients

2 cups uncooked wild rice

1 bunch scallions, green and white parts roughly chopped

½ c slivered almonds

1 carton chicken broth

¼ t salt or to taste

½ c dried cranberries, best unsweetened and unsulfered

2T olive oil

 

Method

1.      Cook wild rice in broth according to package instructions

2.      When rice is done lightly sautee scallions for 1-2 minutes in a bit of oil, mix in a large

       serving bowl with almonds, rice, cranberries, and 2T olive oil.

 

Serve with a green salad topped with goat cheese and balsamic vinaigrette; and something chocolate for dessert for a complete meal.
