Sweet and Tender Salad
Yield 2-4 servings (depending on whether it’s served as a first course or your whole meal)
Ingredients:
1 large bunch swiss chard
1 large head of romaine lettuce
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 tablespoons fresh lemon juice
2 tablespoons raw agave nectar or pinch of stevia
1/4 teaspoon Real Salt or sea salt
1/4 cup pecans, chopped
1/4 teaspoon Real Salt or sea salt
1/4 cup pecans, chopped
1/4 cup pine nuts
1/4 cup raisins
1/4 cup raisins
Method:
- Destem the swiss chard. You can leave the more tender parts of the stem (toward the top of each leaf) in the salad, but the harder stems toward the bottom of each leaf should be torn out. Use a knife to chop into small pieces.
- Place the chard into a large bowl. Add the oil, lemon juice, salt, and sweetener of your choice. Massage the mixture thoroughly (a minute or two), and you’ll notice the chard shrinking in size and getting juicy. Add the nuts and raisins and toss to mix. Refrigerate up to 1 hr to let flavors marinate and chard soften.
- Before serving, add washed and chopped romaine to each plate. Top with sweetend and soften chard mixture. Enjoy
