Raw Vegan Creamy Celery Soup
I just whipped this up last night. It was so delicious and simple I had to share. This is great if you crave something creamy but don’t want to eat dairy, soy, or nuts. Soaking of the seeds beforehand is optional of course but makes the seeds easier to digest.
Serves 1 as a main, 2 as an appetizer
Ingredients:
- 1 head organic celery, washed and cut into large chunks
- 1/4 cup raw sunflower seeds soaked 1 hour in water and drained
- 2t organic extra virgin olive oil
- 1/8t celtic sea salt
- 1t italian seasoning (I used a few sprigs of thyme and sage from my herb garden)
- 1/4c water
Method:
Put all ingredients into a vitamix blender** and turn power to high. Blend until mixture reaches desired consistency and temperature. You may need to add more water depending on desired thickness. Can be eaten hot or cold. If you would like it to be warm simply blend longer, use hot water to blend with, or warm on the stove on low for a few minutes. Garnish with chopped cucumbers and/or fresh herbs.
**If you don’t have a vitamix or other high powered blender, you can still easily make this soup. Simply chop up the celery into small instead of large chunks, reserving one piece of celery unchopped to use to poke in the blender and push the celery chunks towards to blades if they aren’t getting blended. You may need to add a bit more water to assist blending.
